Washington lies far, far away from the center of the
bar-b-que universe viewed from say, Baton Rouge.
We are just a distant, foggy, smudge on a wispy,
spiral arm of the hickory-smoked firmament. So you would be right to think that good bar-b-que in Washington is exceedingly
rare.
Thank God for The
General's Bar-B-Que serving up heaping piles of sloppy, steaming, succulent ribs
- divine specimens of authentic southern Louisiana-style bar-b-que.
Robert Porter has served stalwartly as the commanding
officer of Washington's sole outpost for his particular craft, matching his 22nd year here in 2002.
The General's generously prepares the aforementioned
ribs along with sliced tender beef briskets, juicy, slow-roasted chicken and spicy homemade hot links, all simmering in that
sweet, smoky, hot Louisiana sauce.
The sides and desserts command the same southern street
appeal. Coarsely chopped and not so sweet coleslaw, steamed collard and mustard greens, with a tantalizing touch of salt.
Mounds of full flavored honey beans, pecan pie, sweet potato pie and peach cobbler in a buttery flavored crust that will send
you into shock!
Finally, everything is homemade. Order by the pound,
slab, ounce or gallon!
